Pay particular attention to how he simplifies it into a mass. With Pocohantas you can see how even in movement, it moves like a thick solid piece with small break away pieces. also, look how simple the lines on it can be (2nd image). there are only 4-5 lines total, but pay attention to how he designs sections of varying size and how it all flows from the top of the scalp.
Ariel has very full and Volumetric hair. Because it is underwater, this volume is exaggerated, as well as it's "bounce". Its still influenced by gravity and movement but has a much more buoyant feel.
